What to do:
1. Preheat oven to 350°F. Place paper liners in 12 muffin cups. 2. In a medium bowl, combine Streusel Topping ingredients. Stir until mixture is crumbly; set aside. 3. In a large bowl, beat butter and sugar until creamy. Mix in pumpkin, eggs, and vanilla until smooth. Add flour, baking soda, baking powder, pumpkin pie spice, and salt; mix until well combined. Spoon batter evenly into muffin cups; sprinkle with Streusel Topping. 4. Bake 22 to 25 minutes, or until a toothpick comes out clean. Remove from muffin tin and let cool in a wire rack.
