2 lbs. potatoes, freshly cooked and mashed 1/2 lb. kale, just cooked, drained and finely chopped, or one bunch of scallions, (spring onions) finely chopped *1/2 c. milk,or to desired consistency 1/4 c. butter salt and black pepper to taste
What to do:
1. Mix potatoes, kale (or scallions) together. 2. Heat some milk with a generous knob of butter. 3. Beat it into the potato mixture until smooth and creamy. 4. Season to taste with salt and pepper.
