3 c. Texas Rio Star Grapefruit sections 4 Tbsp. Texas Rio Star Grapefruit juice (reserved from sectioning) 36 vanilla wafers 2 (8 oz.) pkgs. of cream cheese, softened 3/4 c. sugar 2 eggs 2 c. strawberry glaze 36 paper muffin cup liners whipped cream
What to do:
1. Place paper liners in muffin tins. Put 1 vanilla wafer in each. Combine cream cheese, sugar, eggs, and grapefruit juice and beat until smooth and creamy. 2. Fill each muffin cup half full. Bake at 350° for 15-20 min. Cool thoroughly. 3. Gently fold grapefruit sections and strawberry glaze together. Top each cheesecake with grapefruit mixture and chill. Serve with whipped cream if desired.
